(so called due to its black and yellow nature)
Firstly, make up a superb vegetable stock. I wont patronise you on this matter. Strain all veg off, discard, and keep the lovely stock.
- black beans (a tin, or pre-cook them yourself if you wish)
- 1 small butternut squash - peeled and cubed
- 1 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- salt and pepper (at end)
Cook the butternut squash first in plain water. Then drain off the water, and add to the hot vegetable stock. Drain and rinse the tin of black beans, then add them. Check that the beans and squash are cooked, then add the washed spinach. Add the spices and seasoning, according to need and taste.
N.B. I have found Biona a good brand of tinned beans. with some brands there can be problems with under-cooking.
