Thai Rice Noodles with Mango and Asparagus

Thai Rice Noodles with Mango and Asparagus

Thai dressing:
  • 3 tbsp lime juice
  • 1 red chilli
  • 2 garlic cloves
  • 3 tbsp soy sauce
  • 2 1/2 tbsp palm sugar - I just use brown demarara sugar

De-seed and finely chop the red chilli. Smash the garlic. Put these things with the other ingredients in a small bowl and stir together.


Asparagus and Mango:
Cook the asparagus. Drain, then cut into smaller length - perhaps the length of your little finger.
While they are cooking - peel the mangoes and chop the flesh.


Rice Noodles:
Boil a pack of rice noodles according to packet instructions. This usually takes a very short time - a little more than blanching. Drain and put on serving dish. Pour the dressing over the rice noodles, mix-up a bit with a fork. Then scatter the mango and asparagus over.
